How do I coordinate and maximize job offers for the best possible negotiation position?

I’ve had five on-site interviews so far and have three more scheduled over the next two weeks, a combination of small startups, medium sized companies, and large companies all in the biotech field. If the places so far, one has asked if I would be ready to make a decision if they gave me an offer and another emailed today to say they wanted to make an offer. A third I’m expecting the same sort of thing from soon. My instinct tells me that I should convince them to hold off until I finish all my interviews and then try to negotiate among the options. Is that a mistake? Should I instead try to get offers as quickly as I can and then ask them to wait until I finish interviews? I should also mention that one of places wanting to make me an offer I’m very excited about and don’t want to ruin the opportunity, but I do feel it’s very important for me to finish the interviews I’ve already accepted for a number of reasons.
