How much info should I expect to find out about a company's bonus structure prior to accepting an offer?

At what point in the interview process do you expect to hear about what bonus structure is at a company, and how much detail do you expect?

My current company pays pretty nice bonuses (15-30%) but they didn't hint at anything like that before I started.

I'm in a few late stage interviews, the company i like best could be above my current salary, but depending on the bonus it could turn into a pay drop.
