Quitting first job out of college

Before I start I just want to note that I am wanting to vent how I feel and am seeking advice.

So i graduate from college in 2017 and started working a few months after my graduation. I took a job that a lot of people would say I am way to overqualified for, but I wanted to get people off my back about being unemployed. In hindsight, I should've gone to all my interviews instead of accepting the first offer i received, but I know that now and am more careful in selecting a position.

Starting the position, everything went well. I was learning and was able to pick up the job fairly fast. I quickly plateaued, and I asked my boss about picking up task. At first he was like "Sure, when we get some free time". Up to now, I have not learned anything from him and everything I learned was on my own. Lately his true personality is starting to show. He is the most narcissistic person I have ever meet and everything is about him. Although I do my work well, there is always a complaint from him, and there is no freedom in creativity or freedom of thought. Everything has to be his "perfect" and his rules only apply to us and not him. My coworkers and I are only a set of hands in his eyes. He was recently promoted to manager of my department and since then a few people have either left the company or transferred department. A couple of days ago my coworker told me he plans on being more stricter because he feel we are not doing enough work.

Also with the company, it was sold twice within a 5 year time frame. We recently got a new CEO and the rumor is we are trying to sell again. As a result, management is more so concern with making the new CEO happy and following his vision. The stability is not there, which is why I am leaving.

I have been at my job for nearly a year. My coworkers and I have been interviewing around and I am definitely leaving soon. I was planning on putting in my resignation within the next month, but after hearing about my boss' plan I am thinking about putting it in this week.

As for my plan after I quit, I had a couple of interview this past week and I feel it went well. I have been interviewing for the past 2 months of so and I am not rushing a decision. I am hoping to hear back sometime this week. If I do not get a job I plan on continually applying, but at the same time I am contemplating going back to school. I will be financially good for at least a year and I have been pretty good with sticking with my budget so I feel okay with my finances. I also would like to reexplore some hobbies if I am to be out of work.

I have read articles of not leaving a job before finding a new one, but I feel that this position and working with my boss is not healthy.
