How do I approach quitting my job?

I've been with my company for over a year (healthcare) and in that time I was shortchanged for my 1 year raise, passed over for a company-wide raise, and made to do other people's jobs for what was supposed to be a short time but 8 months later I'm still doing them despite revisiting the issue multiple times. I am now also partially doing the job of another person on LOA because management was unaware of the length of this LOA despite approving and reviewing it beforehand. Reported HIPAA violating actions of another person, report was shut down and I was berated for reporting. I requested reoreieve from some of my every day tasks, and was told that the topic was no longer up for discussion and to try and make due with my deadlines and workload. These are only some of the issues I've had with the company in the last month alone.

I'm fairly certain that they are trying to force me out by writing me up for things that were either arbitrary or not in my control (shared office during a flood in my work area, door was shut by officemate, apparently against rules, I was written up and not the other person). I've been overincumbered with work for about 6 months and it is literally destroying my mental and physical health.

My question is, I just had an interview online with a company but have not yet received an offer of employment. Should I just quit for the sake of my mental health or should I just wait until I have a formal job offer? If I were to leave after getting a write up could they legally give me a poor reference with the company I just applied to? How do I approach the two week notice discussion once I have decided to leave?

This is my first and only job ever so I don't know how to approach it. I do live at home, but I have no other benefits (ie health insuramce) through my parents, and I am about to finish school as well. Thank you.
